Welcome back! For our second adventure, I want to share a sweet treat with you. Crunchy 'n' Creamy Cornflake Candy. I love this dish and this was the first time I've made it. It was a little gritty because I did not bring it to a complete boil. After I finished making it, I found myself licking the spoon clean! It is a good after-school snack or a dessert. It is dairy-free and good for any time of day.
Equipment
DIRECTIONS
1. Pour sugar and corn syrup into a saucepan and turn on medium heat; dissolve the sugar
2. Heat till boiling; turn off the heat and remove from stove
3. Add in peanut butter and stir till mostly smooth
4. Pour cornflakes in the bowl and then add peanut butter mixture to cornflakes
5. Add vanilla and stir with a rubber spatula or wooden spoon until well combined
6. Refrigerate for 30 minutes

- 1 cup corn syrup
- 1 cup peanut butter
- 4 cups cornflakes
- 1/2 teaspoon vanilla

- Medium mixing bowl
- Rubber spatula or wooden spoon
