Chinese Style Pineapple Chicken



My favorite food is this Asian dish. It combines delicious flavors and spices and has just the right amount of heat. It is super fast and perfect for a weeknight supper. The sweet pineapple goes perfectly with the salty soy sauce and spicy chicken. It only has a few leftover pieces of chicken and sauce. I make it fairly often and it is immediately gobbled up. I did make a big mistake the first time I made it though. The recipe called for 5 teaspoons of cornstarch to make the sauce thick enough so it had the same viscosity as syrup. I misread the recipe and put in 5 tablespoons instead! The sauce got all gloopy and too thick. My mom said it had a bad aftertaste. We ended up having the chicken plain. I always made sure to read the recipe carefully and never have gotten tablespoons mixed up with teaspoons since then.

Serves 4
Adapted from America's Test Kitchen Quick Family Cookbook
Ingredients
1 1/2 lbs frozen breaded chicken breast tenders (if not pre-sliced, cut into 1-inch pieces)
3/4 cups chicken broth
1 (15 oz) can crushed pineapple (separate juice from pineapple, reserve both)
1/4 cup brown sugar
6 tablespoons white vinegar
1/4 cup soy sauce 
1 teaspoon ground ginger

5 teaspoons cornstarch
2 green onions, optional
sesame seeds, optional

Directions
  1. Preheat oven according to package.
  2. Put the chicken in the oven and cook according to package directions.
  3. Meanwhile, measure the remaining ingredients except for pineapple pieces into a 12-inch skillet.
  4. Bring to a simmer, stirring often until thickened.
  5. Turn off heat and toss chicken with sauce and pineapple pieces. Serve with rice. Top with green onions and sesame seeds if desired.
